Why is the AmericanFoodTruck = Price of a SitDown Joint?

why is the American Food Truck equal in price to or even more spendy than a sit-down joint? And if there's no chairs/tables set-up it's a hassle trying to manage eating/drinking!

I'll support them more when they support me more by not being so GREEDY by charging as much or more than a proper sit-down establishment!
